Ingredients: Flour Salt Oil or melted ghee Water 3 boiled potatoes Cumin seeds Crushed Coriander seeds Garam masala Chili powder Turmeric 1 Green chilli Crushed garlic Ginger paste 1 Onion Green peas Lemon juice Crushed cashews Chopped coriander leaves

Instructions: Pour 2 cups of flour in a bowl Add half a teaspoon of salt Mix with a whisk Add 1/4 cup of oil or melted ghee Mix until incorporated Rub the flour with the oil until mixture resembles crumbs Add 1/4 cup of water- Add gradually Than knead until firm dough Cover and let the dough rest for 30 minutes Than get 3 boiled potatoes than roughly chop/ Bolid Add 2 tablespoons of oil in a pan And add 1 teaspoon Cumin seeds Then put 1/2 teaspoon of Garam masala Add 1 teaspoon Chili powder and Turmeric Let cook for 30-60 seconds Finely chop 1 Green chili Add 2-3 cloves of crushed garlic 1 Teaspoon of ginger paste And then add the green chopped chili Cook for 1 minute 1 chopped onion Saute for 3-4 minutes Than add the chopped boiled potatoes in the pan 1 cup of green peas Let it cook Add 1 tablespoon of lemon juice 1/4 cup of water Than add salt Cook for 4-5 minutes, Stir frequently with a wooden spoon Add 1/4 crushed cashews 2 tablespoons of chopped coriander leaves Than let it all cook for a while Then remove from heat and let it cool down Divide the dough into 6-7 equal parts Than shape into balls While working with one ball, keep the remaining balls covered Roll out each ball into an oval Cut it in the middle and brush water in the middle Form a cone with the dough Fill the dough with the potato filling Brush the edges with water, then pinch the edges and seal the dough Then repeat with all of the dough Drop the samosas into hot oil, 4-5 pieces at the time Fry for 4-5 minutes, until golden brown Drain on paper towels
